{Clean Eating Pumpkin Bars}

If you haven't jumped on the pumpkin bandwagon yet....this is the time!!! These are super delicious and EASY!!! The perfect dessert this time of year. Is it crazy that I have a pumpkin spice latte in the morning, pumpkin bread for snack and pumpkin bars for dessert. It may be time for an intervention!! :)




Clean Eating Pumpkin Bars
adapted from: Elana's Pantry
{Makes 12 bars}
  • 1/2 cup pumpkin puree
  • 1/2 cup honey 
  • 2 organic eggs
  • 1 cup almond meal/flour
  • pinch sea salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
Pre-heat oven to 350 degrees.

Place all ingredients in medium sized bowl and whisk until thoroughly combined. Pour into 8 x 8 glass baking dish that has been sprayed with non-stick spray. Bake at 350 for 30 minutes.

  2. Do you think I could sub maple syrup for honey? and double the recipe for a party? I'm also trying to decide if they'll stay good for three days since I won't have time to prep anything the day of the party... Should I keep refrigerated and do a quick bake reheat the night of the party? so many questions, sorry!

    1. Yes...I think that maple syrup should be fine. I think doubling it is okay too...I would just keep a close eye on the baking time to make sure that they are done but not overcooked. 3 days should be fine but I would keep them in the fridge and just bring them out an hour or so before the party to let them get to room temp! I hope that helps and I hope they turn out delicious for you!! :)

  4. Hi! I found your blog off Pinterest and have been loving your recipes! I really wanted to try this one, but when I went shopping for the ingredients I was shocked to find how expensive almond meal/flour is so I was wondering if there is something else I could use in place of that like whole wheat, oat flour, etc? Thanks!

    1. Hey Chelsea! I usually buy my almond meal from Trader Joe's. They have the best prices. If you don't have one in your area...I have read that you can make your own sunflower seed flour by processing sunflower seeds into flour using a food process. Much cheaper but I have never tried this myself! Hope this helps!! :)
